VINEYARD: “Mimosa”- northeastern exposure.
GRAPES USED: Sauvignon Blanc.
PRODUCTION METHOD: The whole bunches are pressed immediately after being harvested manually. Natural decantation of the must and controlled fermentation with selected yeasts. The wine rests and matures on its fine lees until spring, is stabilized without clarification, and is bottled between March and April.
COLOUR: Pale straw yellow with greenish hues.
BOUQUET: Exceptionally elegant, highly characteristic: peach, citrus fruit, passion fruit, and slightly vegetal.
FLAVOUR: Well-defined, gracefully-contoured and balanced. Long aftertaste, while remaining fresh and flavourful.
