GRAPES USED: Chardonnay
PRODUCTION TECHNIQUE:: After early harvesting, the hand-picked grapes are placed in small crates, so to obtain the best ratio between acidity and alcohol. Soft crushing of grapes, natural clarification, prior cooling, and thermo-controlled fermentation. Second fermentation following the “Long Charmat” method. Cold natural stabilization, without any chemical clarification addition.
COLOUR: Pale straw yellow with greenish tinges.
BOUQUET: Fresh and fruity, with a pleasant hint of bread crust in the background.
FLAVOUR: Full and pleasant, with good length and almondy finish.
LABEL: Name and label commemorate a “racing past”: Zagato’s design represents the style of the Ferrari 250 Tour De France Zagato of 1957. The two humps on the car roof were called “Double Bubble”, which gave this bubbly its name.
